Ratatouille

Cooking with Tupperware making Ratatouille in the Microwave Stack Cooker

Ingredients

  • 1 ½ cup eggplant peeled and cubed
  • 1 cup zucchini cubed
  • ¼ cup onion chopped
  • 1 8 oz can tomatoes diced
  • 2 tbsp water
  • 1 tbsp olive oil
  • ½ tsp dried oregano crushed
  • ½ tsp garlic salt
  • ½ tsp marjoram, crushed

Instructions

  • In the 3⁄4-Qt. Casserole Cover add all the ingredients, stir to combine.
  • If Stack Cooking, place in top position, microwave 20-25 minutes.
  • If cooking individually microwave on high for 5-7 minutes.
  • Let rest 5 minutes.
