Asian Chicken Noodle Soup
Cooking with Tupperware making Asian Chicken Noodle Soup in the Microwave Pressure Cooker
Ingredients
- 1 yellow onion diced
- 2 red bell peppers diced
- 1 large carrot julienned or diced
- 2 garlic cloves, minced
- 1 tbsp curry powder
- ½ tsp cayenne pepper
- kosher salt
- 1 15-oz can coconut milk shaken well
- 2-3 cups low-sodium chicken broth
- 2 cups shredded rotisserie chicken
- ⅓ cup chopped fresh cilantro plus more for garnish
- 2 package ramen noodles seasoning packet discarded
- Lime wedges for serving
Instructions
- In the base of the Microwave Pressure Cooker add all ingredients except ramen noodles. Lock cover in place and microwave on high power 15-20 minutes.
- Remove from microwave; let stand 10 minutes or until pressure has released and valve indicator is in the down position. Remove cover, add noodles, recover and microwave for 5 minutes.
- Let stand 10 minutes or until pressure has released and valve indicator is in the down position. Remove cover and serve
