Asian Chicken Noodle Soup

Cooking with Tupperware making Asian Chicken Noodle Soup in the Microwave Pressure Cooker

Ingredients

  • 1 yellow onion diced
  • 2 red bell peppers diced
  • 1 large carrot julienned or diced
  • 2 garlic cloves, minced
  • 1 tbsp curry powder
  • ½ tsp cayenne pepper
  • kosher salt
  • 1 15-oz can coconut milk shaken well
  • 2-3 cups low-sodium chicken broth
  • 2 cups shredded rotisserie chicken
  • cup chopped fresh cilantro plus more for garnish
  • 2 package ramen noodles seasoning packet discarded
  • Lime wedges for serving

Instructions

  • In the base of the Microwave Pressure Cooker add all ingredients except ramen noodles. Lock cover in place and microwave on high power 15-20 minutes.
  • Remove from microwave; let stand 10 minutes or until pressure has released and valve indicator is in the down position. Remove cover, add noodles, recover and microwave for 5 minutes.
  • Let stand 10 minutes or until pressure has released and valve indicator is in the down position. Remove cover and serve
